Yes, a 4.80-8 sized tire like the Kenda K371 # AM10004 you were looking at will work well to replace the 16x5.00-8 tires on your garden tractor. These are very similarly sized tires so you aren't going to see much of a difference (if at all) when mounting them to your tractor.

The modern day equivalent of a 20.5 x 8-10 tire is going to be a 205/65-10. The dimensions are as close as you can get to the old size. We have several tires and tire and wheel combos in this size with various bolt patterns (if a wheel is needed). Check out the link I attached to see them all.
